Healthy Quinoa Salad

Light and fresh, this flavourful salad can be served as a side dish or a main course.

INGREDIENTS
  • 3 cups cooked quinoa
  • 1 cup garbanzo beans (chickpeas), rinsed and drained
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1 cup chopped green peppers
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons Wafu® Ginger Carrot Japanese Dressing
DIRECTIONS
  1. In a medium bowl, combine the quinoa, chickpeas, cucumber, tomatoes, green peppers and parsley.
  2. Pour the Wafu® Ginger Carrot Japanese Dressing over the salad and toss to coat evenly.
