TEZU: Hand Vinegar

Traditional hand vinegar is an essential part of sushi making. Use it to moisten your fingers so that rice does not stick to your hands.

INGRÉDIENTS
  • 1 cup water
  • ¼ cup Japanese rice vinegar
PRÉPARATION
  1. Dip your hands into hand vinegar any time rice begins to stick to your fingers while molding sushi.
  2. Dip your hands in the hand vinegar before handling sushi rice and molding sushi.
  3. Mix the rice vinegar and water in a bowl.
